Tuna in Coconut Cream Recipe

Project 365 - Day 35 - 4th Feb 08 : TUNA IN COCONUT CREAM

OK. Don’t be surprised. This may seem totally out of place here. But, as I’ve mentioned some time ago, I used to have a side food blog here at ShaiCoggins.com. It was called “Dash Food”. I started it as a way to write down my recipes, share some restaurant reviews, and post my growing collection of food-related photos. Yes, I LOVE taking pictures of food.

Anyway, since I was really finding it difficult to maintain, I decided to integrate Dash Food in to this blog when I moved back to Wordpress. Hence, the addition of the Food + Dining category.

And, now that I promised I’d share my recipe for this quick and easy meal with some folks, I know I have to do it. And, since cooking and food are very much a part of me… Well…. Here ‘ya go. ;-)

Ingredients:

  • 1 can tuna in oil (approx. 200 grams)
  • 1 small red onion, peeled and sliced
  • 1-2 cloves of fresh garlic, peeled and crushed
  • 1 can coconut cream or coconut milk (approx. 100 grams)
  • 1 teaspoon dry coriander
  • 1-2 red chillis, sliced (optional)
  • pinch of salt or garlic salt
  • freshly ground pepper
  • small slice of lime (optional)

How To Cook:
Saute sliced onions and crushed garlic in 1 tsp of oil in pan. You might want to use a bit of the oil from the tuna can. Once lightly browned, add the tuna. Mix. Then, add the coconut cream. Stir. Add flavour by mixing the other ingredients (dry coriander, salt, pepper). If you want it to have a bit of heat/spice, add some chillis. Stir it together for 2 to 3 minutes until the sauce starts to simmer. This is highly optional, but if you want to add a bit of twist, just squeeze a small slice of lime juice in. Then, give it a final stir. Take it out of the pan and put it in to a dish and serve with white jasmine rice. Enjoy!

I’m so excited to try this! I love coconut milk… And quick and easy is a great bonus. Thanks for sharing it.
It’s funny that you posted this today. Last night I posted my recipe for Hawaiian Ambrosia - a quick and easy recipe - and was thinking “I don’t care if this is an odd addition to the blog; it’s good!” :)

Well, for me, I guess I’m trying to get back to how I used to blog somehow - just include anything and everything that I feel like blogging about. Doesn’t matter if it seems weird or whatever. I’ve got a lot of interests, and I need a place to write thoughts and memories and such down. That was one of the reasons I started to blog. So, I decided that I’m going back to my blogging roots. :-)

Hawaiian Ambrosia is a mix of fruit and yogurt… I try to avoid eating dairy, but I make an exception with yogurt, which I eat a lot of! If you want to try it out, drop by my blog for the recipe. :)
If your blogging roots are anything like how you’re blogging now, I’m glad you’ve gone back to it! :) This is how I like to blog as well. Anything and everything that makes me smile. I’m in a ‘life-improvement’ phase right now, so I’m trying a lot of different things that improve my world… hence, lots of things to blog about!

I had a very long period of not knowing which way to turn with this blog, but I think I’m finally cool with where I’m headed. I’m sure there will still be plenty of evolution, but so far, I’m happy. :-) And yes… with life improvement and self development comes lots of blogging fodder. Keep it up! Sounds like you’re doing a fabulous job.
